Asian Style Eggs with Greens

Asian style eggs with greens is a light and fresh vegetarian dish.  In Asia scrambled or fried eggs are often served with tomato and to this I will add fried organic tofu for delicious texture (and taste!).  One of our favourite meals on a Sunday evening.  It does require a bit of preparation so that everything comes together at the same time but it’s worth it.

Ingredients:

Macadamia nut oil for cooking

4 spring onions, chopped finely

2 cm knob of fresh ginger, finely chopped

2 cloves garlic

1 red chilli, chopped or ¼ teaspoon of chilli flakes

8 Truss tomatoes

1 tablespoon of fish sauce

200 grams of organic firm tofu, but into 3 cm pieces

¼ cup of brown rice flour

4 free range eggs

2 bunches of broccolini or bok choy, or 200 grams of French beans.

Fresh coriander leaves, roughly chopped

 

Topping:

1 tablespoon of toasted sesame seeds

¼ cup of toasted cashew nuts

1/2 teaspoon of chilli flakes

Combine all ingredients in a small bowl and put aside until ready to serve

 

Method:

  • Heat 1 tablespoon of oil in a frypan over a medium heat.
  • Gently cook spring onions for 2 minutes till soft.
  • Add garlic, ginger, chilli and lemongrass.
  • Cook 2 minutes until fragrant.
  • Add chopped tomatoes and fish oil.
  • Cook on a moderate heat for 20 minutes or until liquid reduces and sauce is slightly thickened.
  • Vegetables: If I am cooking green beans or Chinese greens I steam these vegetables lightly.  When cooking broccolini it is delicious roasted.  Cut each broccolini steam diagonally half way up the stem.  Lay on a baking tray and drizzle very sparingly with avocado oil.  Lightly salt.  Place in a moderate oven for approximately 15 minutes or until going brown and slight crispy on the heads.  Remove from oven.
  • While the sauce and vegetables are cooking fry, scramble or boil your eggs – which ever way you prefer to eat them.
  • In another frypan heat oil.
  • Dust your tofu pieces in a mixture of rice flour, turmeric powder and Himalayan sea salt.
  • Shallow fry in batches until pieces are golden and crisp.
  • Drain on paper towel until ready to put the dish together.
  • There is a ‘bit going on’ at this last stage but it will all come together.
  • When all elements are ready place ¼ of the tomato sauce on each plate.
  • On top of the sauce place one egg and to the side place ¼ of the green vegetable.
  • Top the egg and vegetable with ¼ of the friend tofu, sprinkle with topping and roughly chopped fresh coriander.
