Paleo Nut Porridge

Paleo Nut Porridge recipe is suitable for those following a paleo or SIBO diet.  You can also try Quinoa Porridge if you are in Phase 2 – click link here.

 

Ingredients:

1/2 cup raw cashews

1/2 cup raw almonds

1/2 cup raw pecans or macadamia nuts

2 cups of coconut or almond milk

1/2 banana or half a cup of sliced strawberries

2 teaspoons of organic cinnamon

1 teaspoon of raw honey

 

Method:

  • Place the nuts in a large bowl and sprinkle Himalayan salt over them.
  • Pour filtered water over the nuts, ensuring that they are covered by two centimetres of water.
  • Cover the bowl and soak overnight.
  • Drain the nuts and rinse 2 or 3 times, until the water runs clear.
  • Add the drained nuts and the banana to a food processor or high-speed blender and then blend the nuts with the coconut or almond milk and cinnamon until smooth.
  • Put the mixture in a saucepan on the stove and stir in milk with a wooden spoon over a medium-high heat for approximately 5 minutes or until milk is absorbed.
  • Serve with fresh fruit and extra milk of choice if desired.
