Zucchini & Bacon Fritters

These Zucchini & Bacon Fritters are delicious hot or cold, as part of a meal or own their own.

 

Ingredients

3 zucchinis grated

2 rashers of organic, nitrate free bacon

4 eggs

2 tablespoons of almond meal

onion flakes, to taste

1 tablespoon of Keen’s dried curry powder or your own favourite curry powder.

salt and pepper

avocado or macadamia nut oil for cooking

 

Method:

  • Chop bacon and fry in pan until cooked.
  • In a large bowl add grated zucchini, cooked bacon, eggs, almond meal, curry powder, chopped parsley, onion and garlic flakes, salt and pepper to taste.
  • Reheat pan used to cook bacon, adding a little oil if necessary.
  • Spoon in small amounts of mixture and cook until egg is set then turn and cook until the zucchini are soft.
  • Don’t have the pan too hot or the patties will burn.
  • Diced steamed chicken or cooked atlantic salmon can also be added to the mixture for a fabulous lunch or breakfast.
