Blueberry & Banana Pancakes (Gluten Free)

 

Blueberry Pancakes

 

These Blueberry & Banana Pancakes are a wonderfully simple and delicious recipe which can be made for breakfast or a healthy snack.

Ingredients:

100grms ground almonds (1 cup)
1 tablespoon of ground linseed (ensure ground linseed is always kept in the fridge)
1/4 teaspoon of gluten & aluminium free baking powder
1 teaspoon of cinnamon powder
2 free range eggs
2 ripe bananas, mashed
125grms fresh blueberries

Method:

Combine mashed bananas and eggs, add almond meal, linseed, baking powder and cinnamon.
Fold in blueberries and allow to sit for five minutes.
Heat a pan over a low heat and add a little extra virgin olive oil.
Place spoonfuls of batter into rounds in pan and flatten slightly with the back of a spoon.
Cook slowly on a low heat and allow to cook.
Flip the pancake over to finish cooking.
Serve with a drizzle of honey and a little plain yoghurt.
