Nut Slice

This Nut Slice is absolutely delicious but at the same time nutritious and great energy boosting snack.
(Almonds can be substituted for hazelnuts)

Ingredients:

Nut Slice:

2 cups of coarsely ground walnuts
1/2 cup of coarsely ground almonds
2+1/2 cups of organic dessicated coconut
1/2 cup of honey or rice syrup
1/4 cup of melted coconut oil (maybe a little more)
1/2 teaspoon of sea salt or Himalayan salt
1 teaspoon of vanilla essence

Cacoa Glaze:

1/2 cup of honey or rice syrup
2 tablespoons of unsweetened coconut milk
1 cup of unsweetened cacao powder
1/4 cup of coconut oil

 

Method:

Preheat oven to 180 degrees C
Line a rectangular baking pan (approx. 21cm x 12cm x 4cm) with baking paper.
Using a food processor combine the nut slice mixture ingredients well.
Press the mixture evenly into the baking pan.
Press mixture evenly or until it is golden-brown and you can smell toasted coconut. (Be careful not to burn it – you may need to cover it with baking paper for the last five minutes).
When cooked, remove it from the oven and leave to cool slightly in the pan.
NB: Don’t let it cool completely, the chocolate glaze will spread better on a warm bar.

Icing:

In a medium saucepan, combine the honey, coconut oil and coconut milk, and cook over a medium heat.
Stir continuously until the oil and honey have melted and the mixture is hot but not boiling.
Remove from the heat and whisk in the cacao powder.
Stir until the mixture is well combined and silky-smooth.
Spread the warm chocolate glaze evenly over the warm bar.
Refrigerate for at least 30 minutes or until the chocolate set.
When set, remove from the fridge and cut the bar into 4cm square pieces.
Store in an airtight container in the fridge.
