Raw Salted Caramel Slice

Makes approx. 12 squares

This is my variation on a wonderful indulgent treat which is worth the effort.  Once it is set, cut the slice into squares and store in the refrigerator.  If you also enjoy a (Almost) Raw Snickers Slice this same recipe can be easily converted – just go to the bottom of the recipe for adjustments.

 

Ingredients:

Crust

1 cup of almonds

1/4 cup dessicated coconut

1/2 cup of Medjool dates, roughly chopped

1/4 cup ghee, melted or softened coconut oil

Salted Caramel Filling

1 cup of raw cashews

1/4 cup of coconut milk

2 tablespoons of almond butter

1/2 cup of coconut oil

1+1/2 cups of Medjool dates roughly chopped

1 teaspoon of sea salt (I like the medium grind but you may prefer the finer ground.  Always start by adding half and adjusting to your taste).

Chocolate Icing

1/3 cup of coconut oil

3 tablespoons raw cacao powder

1/4 cup of rice malt syrup or honey

1 level tablespoon of coconut cream (if desired, although you can leave this out)

 

Method:

Crust

Place the almonds in a food processor and process until it resembles almond flour.  Add the coconut, dates and ghee and blend until well combined.

Line a slice tin with baking paper and press the crust mixture into the base to form an even layer, and place tin in refrigerator.

Salted Caramel

Place the cashews and coconut milk in a food processor and process until the mixture becomes creamy.

Add the coconut oil, dates and half the salt and process until well combined.  Check the taste for salt and add more if desired.  (It is always important to find the balance between not enough and too much salt). Mixture will resemble a gooey caramel.

Take tin out of fridge and spread caramel over crust evenly, using a spatula to even out the top when completed. Place tin back in fridge while making chocolate.

Chocolate Icing

Place all the ingredients in a food processor and process until smooth and shiny.  Immediately pour mixture over the caramel layer evenly and place back in fridge.

Return slice to refrigerator for at least two hours or until fully set before taking a sharp knife and cutting into squares.

 

Raw Snickers Slice:  

You can change this recipe into a raw snickers slice by –

Crust: Replace the dessicated coconut with 1 tablespoon of organic medium ground peanut butter.

Filling:  Replace the almond butter with 2 heaped tablespoons of organic medium ground peanut butter and reduce salt to 1/2 teaspoon.

Icing:  Sprinkle 1/4 cup of roughly chopped dry roasted, unsalted peanuts over the icing before placing the slice back in the fridge to set.
