Rogan Josh Beef Curry

This Rogan Josh Beef Curry is hearty and delicious even though the base is made of tomato, rather than coconut milk.   People are always surprised by how delicious this recipe this is and usually becomes a firm favourite. It is a quick and simple meal to prepare and perfect for cold winter days and nights.

Ingredients:

2 teaspoons of ghee,  coconut or avocado oil
1 red onion
1 clove garlic, finely chopped
4 ripe but firm tomatoes, finely chopped
500gms diced organic beef
2-3 tablespoons rogan josh curry paste (to taste)
2 teaspoons of turmeric powder
1 tablespoon organic tomato paste
8 fresh kaffir lime leaves
sea salt, to taste
Juice of 2 limes
300g baby spinach
Steamed organic basmati rice or brown rice
½ cup fresh chopped coriander

 

Method:

Place oil in a deep frying pan. Add onion, sauté till translucent.
Add garlic, sauté for 1 minute.
If using meat, add beef at this point and brown meat.
Add tomato and chickpeas, stirring for 1 minute.
Add curry, turmeric and tomato paste and stir well.
Add kaffir lime leaves, a generous pinch of salt, lime juice and spinach.
Stir well, reduce heat, place lid on frying pan and simmer gently for 15 minutes.
Place rice on serving plates, sprinkle with coriander and serve.

Note: for a non paleo option add 1 tin or organic chickpeas (rinsed) to the recipe.
