My No Bake Almond Butter and Muesli slice is something I make when my teenage son has the munchies and wants a snack in a hurry!  I toast organic oats and spelt flakes and mix these with nuts, seeds and coconut and then bind it together with delicious almond butter and some maple syrup.  A quicker variation is just to replace the dry ingredients in this recipe with 4 cups of your favourite toasted muesli.  Shared among family and friends it doesn’t last long but it doesn’t take long to make either.

What’s good about it? –  oats are a great source of soluble fibre that keep you feeling fuller for longer.  The beta-glucan fibre in oats can also help lower cholesterol levels.  Pepitas are very high in zinc and  Pepitas and almonds are packed with protein and add an irresistible flavour.  Almonds add a generous dose of the antioxidant vitamin E, pepitas are a very high source of zinc, while hemp seeds provide Omega 3 & 6 essential fatty acids.

Ingredients:

1 cup of oats (lightly toasted in the oven for 15 minutes with the spelt flakes)

1 cup spelt flakes

3/4 cups dessicated coconut

1/4 cup pepita seeds

1/4 cup slivered almonds

1/4 cup of hemp seeds or activated buckwheat

6 Medjool dates, roughly chopped

3/4 cup of Almond nut butter

250grms of ghee (or coconut oil for vegan option)

1/2 cup of rice malt syrup or organic maple syrup NB: add more or less according to your taste.

Chocolate Topping:

200 grams of your favourite dark organic chocolate

2 tablespoons of ghee or coconut oil.

Place in a heavy saucepan and melt slowly and stir continuously so it doesn’t burn.

Method:

  • In a large mixing bowl, place all the dry ingredients and mix well by hand with a metal spoon.
  • Melt the almond butter, ghee (or coconut oil) and rice malt syrup (or maple syrup) gently in a saucepan until melted together.
  • Once melted, pour over dry ingredients and mix well.
  • Press mixture into a lined slice tin.
  • Prepare chocolate topping.
  • Once you have topped with melted chocolate, place tin in fridge to set for at least 30 minutes.
  • Once slice is set, cut into squares and eat and enjoy!
